Oreo Cookies and Cream Cookie Cake
This Oreo Cookies and Cream Cookie Cake combines a delicious chocolate chip and Oreo cookie base with a creamy Oreo buttercream on top. It's a treat that's perfect for anyone who loves the classic Oreo cookie in cake form!
Ingredients:
For the Cookie Cake:
3/4 cup salted butter, room temperature 🧈
1/4 cup brown sugar, lightly packed 🍂
3/4 cup granulated sugar 🍬
1 large egg 🥚
1 tsp vanilla extract 🍦
1 3/4 cups all-purpose flour 🌾
1 tsp baking soda 🧁
1 cup crushed Oreos (about 12 Oreos) 🍪
1/2 cup chocolate chunks 🍫
For the Icing:
6 tbsp butter 🧈
6 tbsp shortening 🧈
3 cups powdered sugar 🍬
3/4 tsp vanilla extract 🍦
3/4 cup Oreo crumbs (about 9 Oreos) 🍪
2–3 tsp milk or water 🥛
Additional Oreos, cut into quarters, for topping 🍪
Instructions:
Preheat Oven:
Preheat the oven to 350°F (175°C). Prepare a 9-inch cake pan by lining the bottom with parchment paper and spraying the sides with baking spray.
Prepare the Cookie Cake:
In a large bowl, cream together the salted butter and sugars until light and fluffy, about 3-4 minutes.
Mix in the egg and vanilla extract until well combined.
Add the flour and baking soda, mixing until just combined.
Fold in the crushed Oreos and chocolate chunks. The dough will be thick.
Press the dough evenly into the prepared cake pan.
Bake for 18-20 minutes, or until the edges are lightly golden. The center may appear slightly underbaked, which is fine.
Allow the cookie cake to cool in the pan for a few minutes before transferring it to a cooling rack to cool completely.
Make the Icing:
In a mixing bowl, beat the butter and shortening until smooth.
Gradually add 2 cups of powdered sugar, mixing until combined.
Add the vanilla extract and 1 tsp of milk or water, and mix well.
Add the remaining powdered sugar and mix until the icing is smooth.
Stir in the Oreo crumbs.
Adjust the consistency with additional milk or water as needed.
Assemble the Cake:
Once the cookie cake is completely cool, spread the Oreo buttercream evenly over the top.
Decorate with quartered Oreos on top of the icing.
Tips:
For an extra touch, you can add a layer of crushed Oreos between the cookie cake and the icing.
Make sure the cookie cake is completely cool before icing to prevent the frosting from melting.
