Ingredients:
- 1 fatty Ribeye steak, approximately 1.5 inches thick
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- Salt and freshly ground black pepper to taste
- 2 tablespoons unsalted butter
Directions:
1. Let the Ribeye steak rest at room temperature for about 30 minutes before cooking.
2. Preheat your oven to 400°F (200°C).
3. In a small bowl, combine the minced garlic, rosemary, thyme, salt, and pepper with olive oil to create a herb paste.
4. Rub the herb paste evenly over both sides of the steak.
5. Heat a cast-iron skillet over high heat. Once hot, add the steak to the skillet and sear for about 2 minutes on each side, until a golden crust forms.
6. Add the unsalted butter to the skillet and allow it to melt over the steak, spooning it over the top for an additional minute.
7. Transfer the skillet to the preheated oven and roast for about 10-15 minutes for medium-rare, or until it reaches your desired level of doneness.
8. Let the steak rest for 10 minutes before slicing and serving.
