Cheesecake Stuffed Chocolate Cupcakes
Ingredients:
- 2 cups semisweet chocolate chips
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Directions:
1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
2. Melt 1 cup of chocolate chips in a microwave-safe bowl and allow to cool slightly.
3. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. In another bowl, combine the granulated sugar, milk, vegetable oil, eggs, and vanilla extract and whisk until well mixed. Gradually combine the wet ingredients with the dry ingredients, stirring just until everything is incorporated.
4. Fold the melted chocolate into the batter. Fill each cupcake liner halfway with the cupcake batter.
5. In a separate bowl, combine the softened cream cheese, powdered sugar, and vanilla extract, mixing until smooth. Take a dollop of the cheesecake filling and add it on top of the cupcake batter, then cover it with an additional layer of batter until the liners are about three-quarters full.
6. Bake the cupcakes for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before serving.
