Ingredients:
4 cups rhubarb, chopped
3 cups granulated sugar
1 small orange, zest and juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 box (1.75 oz) powdered fruit pectin
Directions:
In a large pot, combine rhubarb, sugar, orange zest, and orange juice. Let stand for 10 minutes to macerate, allowing the sugar to draw out the juices from the rhubarb.
Stir in cinnamon, nutmeg, and powdered pectin. Bring the mixture to a full rolling boil over high heat, stirring constantly.
Once boiling, cook for 1-2 minutes, then remove from heat.
Skim off any foam with a spoon.
Immediately pour hot jam into sterilized jars, leaving 1/4 inch headspace. Seal jars and process in a water bath for 10 minutes.
Let jars cool completely at room temperature. Check seals; lids should not flex when center is pressed.
