Best Southern Potato Salad #easter

Don’t refrigerate your potato until salad until it has cooked down. I choose 2 different types of potatoes for potato salad for texture and flavor

~~Ingredients ~~
3 to 4 large size Russet Potatoes
3 # bag small Red Potatoes (I mix mine, but you can choose one type)
6 large eggs
1/4 of a medium salad onion, diced small (not a cooking onion)
1 small jar of pimentos, well drained
2 heaping tablespoons of sweet relish, drained
1 to 2 tablespoons yellow mustard
1 cup Blue Plate Mayonnaise
Salt/pepper to taste
1/4 teaspoon dried parsley flaked
Paprika, if desired

~~Instructions ~~
Boil your eggs in 1 teaspoon salt and set aside in ice water after they are done. You will need 4 eggs for the salad and 2 to garnish the salad.
Prepare your potatoes, peel, cut up into bite size pieces, not too big, (try to make them all about the same size) and wash them til water is clear. Place in a boiler with 1/2 teaspoon salt cover with water, about one inch above potatoes. Bring the potatoes to a rapid boil, cover and lower heat to low on your stove and let cook for 10 minutes. When potatoes are done, immediately drain them. Don’t let them sit in the water and become soggy. Put the potatoes back into the pot that you cooked them in. and sprinkle them with salt and pepper to taste. I use this time to dice my onion as small as I can get them. and get all my ingredients out, as the potatoes and eggs are cooling for a few minutes. Then, add your pimentos, relish, mustard, parsley and mayonnaise to the potatoes. Pour the water off your eggs, and using the back on a spoon, tap the egg right in the center and on one end and it should peel right off, or you can crack them on the counter. Dice your eggs up into your salad, about the same size as the potatoes. Using a wooden spoon, stir til well combined. If you need a little mayonnaise, add it one teaspoon at the time, because you don’t want a salad that is too wet You want the consistency to your preference. Taste for salt and pepper. It is up to the individual’s taste for salt and pepper. Then pour into your serving dish, add your last 2 eggs sliced for decoration and sprinkle with Paprika or Pepper if desired.
