I finally found the perfect way to make onion rings! Chaffle batter!!! I was thinking Ist night about trying to find a good recipie for onion rings.
I really miss them because we always have them with our phylly steak sandwiches or sloppy joes, but all the recipies l've tried (coating them with cheese, almond flour or flax seed) always come out nasty. But then I thought, what about chaffle batter?? I tried it today and they came out awesome! They taste just like restaurant style onion rings!! and, their low carb! Heres the recipie I used:
BATTER
2 large eggs
1/3 cup almond flour
1/2 Tb coconut flour
1/4 ts baking powder
dash salt (im sure you could also add garlic or onion powder too)
*water to the if needed (but batter should be fairly thick)
1 medium yellow onion, cut in rings
Mix all chaffle ingredients in bowl, then dip onion rings in batter. Fry in hot oil till golden.
I got about 8 to 10 onion rings out of the batter.
For a whole serving that would equal about 400 cal, 22 g fat, 10 net carbs and 3 g protein.
