Creamy Garlic Butter Beef Bowtie Pasta with Roasted Red Peppers & Mozzarella
Ingredients:
1 pound bowtie pasta
1 pound sirloin steak, cut into bite-sized pieces
2 red bell peppers
4 tbsp olive oil, divided
4 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tbsp butter
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
8 oz fresh mozzarella, cut into cubes
Fresh basil, chopped, for garnish
Directions:
1. Roast the Red Peppers: Preheat your oven to 400°F (200°C). Halve the red peppers, remove the seeds, and place them cut-side down on a baking sheet lined with parchment paper. Drizzle with 2 tablespoons of olive oil, salt, and pepper. Roast for 25-30 minutes, or until the skins are blackened and blistered. Let them cool slightly, then peel off the skins and slice into strips.
2. Cook the Pasta: While the peppers are roasting, cook the bowtie pasta according to package directions until al dente. Drain and set aside.
3. Sear the Beef: In a large skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Season the beef with salt, pepper, and Italian seasoning. Sear the beef in batches until browned on all sides. Remove the beef from the skillet and set aside.
4. Make the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using) and cook for about 1 minute, until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and cook until the sauce has thickened slightly, about 2-3 minutes. Season with salt and pepper to taste.
5. Combine and Bake: Add the cooked pasta, roasted red peppers, and seared beef to the skillet with the creamy garlic butter sauce. Toss everything together to coat. Transfer the pasta mixture to a greased 9x13 inch baking dish. Sprinkle the mozzarella cubes evenly over the top.
6. Bake: Bake in the preheated oven for 10-15 minutes, or until the mozzarella is melted and bubbly.
7. Garnish and Serve: Remove from the oven and garnish with fresh chopped basil. Serve immediately and enjoy!
