Strawberry Sugar Cookies
Ingredients:
1 box strawberry cake mix
2 large eggs
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup granulated sugar (for rolling)
Directions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the cake mix, eggs, oil, and vanilla extract. Stir until a soft dough forms.
Scoop out dough (about 1 tablespoon per cookie) and roll into balls.
Roll each dough ball in granulated sugar.
Place cookies 2 inches apart on the prepared baking sheet.
Bake for 9–11 minutes, until the edges are set and tops are crinkled.
Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Tips:
Chill dough for 15 minutes before baking for puffier cookies.
