Honey Garlic Salmon with Roasted Potatoes & Asparagus 🍯🐟🥔🌱
This Honey Garlic Salmon paired with crispy roasted potatoes and tender asparagus is the ultimate easy yet delicious dinner. The salmon is glazed with a sweet and savory honey garlic sauce, while the sides roast to perfection!
Ingredients:
4 salmon fillets 🐟
1 lb baby potatoes, halved 🥔
1 bunch asparagus, trimmed 🌱
2 tbsp olive oil 🫒
3 tbsp honey 🍯
3 cloves garlic, minced 🧄
1 tbsp soy sauce 🍶
1 tsp lemon juice 🍋
Salt and pepper, to taste 🧂
Fresh parsley, chopped (for garnish) 🌿
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Potatoes: Toss the halved baby potatoes with 1 tbsp of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roast the Potatoes: Roast the potatoes for 25-30 minutes, or until golden and crispy.
Prepare the Asparagus: While the potatoes cook, toss the asparagus with 1 tbsp of olive oil, salt, and pepper. Add the asparagus to the baking sheet with the potatoes for the last 10-12 minutes of roasting.
Cook the Salmon: In a small bowl, mix honey, garlic, soy sauce, and lemon juice. Season the salmon fillets with salt and pepper. Heat a non-stick skillet over medium-high heat and cook the salmon for 3-4 minutes per side, basting with the honey garlic sauce as it cooks.
