Garlic Parmesan Chicken Meatloaf
Serves 6
Ingredients:
For the Meatloaf:
1.5 lbs (680g) ground chicken (or turkey)
1 cup panko breadcrumbs
½ cup grated Parmesan cheese (plus extra for topping)
⅓ cup whole milk
1 large egg
4 garlic cloves, minced
¼ cup fresh parsley, chopped
1 tsp Italian seasoning
1 tsp onion powder
1 tsp salt
½ tsp black pepper
For the Glaze (Optional):
¼ cup ketchup
2 tbsp balsamic glaze or honey
1 tsp garlic powder
Instructions:
1. Prep the Oven & Pan:
Preheat oven to 375°F (190°C).
Line a loaf pan with parchment paper (or grease lightly).
2. Make the Meatloaf Mix:
In a bowl, soak panko in milk for 5 minutes.
Add ground chicken, egg, Parmesan, garlic, parsley, Italian seasoning, onion powder, salt, and pepper. Mix gently (don’t overwork).
3. Shape & Bake:
Press mixture into the loaf pan.
Optional glaze: Mix ketchup, balsamic glaze, and garlic powder; spread over top.
Sprinkle extra Parmesan on top for a golden crust.
Bake for 45–50 minutes until internal temp reaches 165°F (74°C).
4. Rest & Serve:
Let rest 10 minutes before slicing.
Garnish with fresh parsley and extra Parmesa
