Lemon Loaf Recipe

Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup plain Greek yogurt or sour cream
1/4 cup freshly squeezed lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
For the Lemon Glaze look below
For thick cream frosting add one pack of cream cheese

1 cup powdered sugar
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.

Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream the Butter and Sugar:
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

Add the Eggs and Flavorings:
Beat in the eggs one at a time, mixing well after each addition. Then add the Greek yogurt (or sour cream), lemon juice, lemon zest, and vanilla extract. Mix until combined.

Combine the Mixtures:
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

Bake the Loaf:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Lemon Glaze:
While the loaf is baking, mix the powdered sugar, lemon juice, and lemon zest in a small bowl to make the glaze.

Glaze the Loaf:
Once the loaf is done baking, allow it to cool in the pan for 10 minutes, then transfer it to a wire rack. While the loaf is still warm, pour the lemon glaze over the top, allowing it to soak in.

Cool and Serve:
Let the loaf cool completely before slicing and serving.
