Easy Homemade Matcha Energy Bars Packed with Nuts, Seeds & Goodness 🌱💪

Ingredients:
1 cup / 140g raw cashews or almonds
1 cup / 175g Medjool dates, pitted
1/4 cup / 35g hemp seeds or pumpkin seeds
2 tablespoons / 24g chia seeds
1-2 tablespoons / 6-12g culinary grade matcha powder (adjust to taste preference)
1 tablespoon / 15ml melted coconut oil
1 teaspoon / 5ml vanilla extract
Pinch of sea salt
Optional: Shredded coconut or chopped pistachios for topping

Directions:
1. Add cashews/almonds to a food processor and pulse until they form a coarse meal.
2. Add the pitted Medjool dates (soak first if dry, then drain well), hemp/pumpkin seeds, chia seeds, matcha powder (start with 1 tbsp and add more if desired), melted coconut oil, vanilla extract, and salt to the food processor.
3. Process until the mixture starts to combine and forms a sticky, green-tinged dough that holds together when squeezed. If too dry, add another date or a teaspoon of water/coconut oil; if too sticky, add a tablespoon of nuts or seeds.
4. Line an 8x4 inch (20x10 cm) loaf pan or a small square container with parchment paper, leaving an overhang for easy removal.
5. Press the matcha mixture firmly and evenly into the bottom of the prepared pan.
6. Sprinkle with optional shredded coconut or chopped pistachios and press gently.
7. Chill in the freezer for at least 30 minutes, or in the refrigerator for 1-2 hours, until firm.
8. Lift the slab out using the parchment paper overhang and cut into bars or squares using a sharp knife.
9. Store in an airtight container in the refrigerator for up to a week or freezer for longer storage.
