Zesty Citrus Cherry Pistachio Delight Cheesecake

Ingredients:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
Zest of 1 lemon
Zest of 1 lime
¼ cup freshly squeezed lemon juice
2 tbsp freshly squeezed lime juice
½ cup sour cream
½ cup chopped maraschino cherries
½ cup shelled pistachios, roughly chopped
Directions:
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form an even crust. Chill for 10 minutes.
In a large bowl, beat the cream cheese until smooth and creamy. Add 1 cup sugar and continue to mix until well combined.
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, lime zest, lemon juice, and lime juice.
Fold in sour cream, then gently mix in chopped cherries and pistachios.
Pour the filling into the crust and smooth the top with a spatula.
Bake for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake sit inside with the door slightly open for 1 hour.
Remove and let cool completely at room temperature. Refrigerate for at least 4 hours or overnight before serving.
