Creamy Garlic Butter Beef Pasta in One Pot

Ingredients:

1 pound ground beef
1 tablespoon olive oil
1 yellow onion, chopped
4 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional, for a little kick!)
4 cups beef broth
1 (14.5 ounce) can diced tomatoes, undrained
1 pound pasta (penne, rotini, or your favorite short shape)
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tablespoons butter
Fresh parsley, chopped (for garnish)
Salt and pepper to taste

Directions:

1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
2. Add the olive oil, chopped onion, and minced garlic to the pot. Cook until the onion is softened and translucent, about 5 minutes.
3. Stir in the Italian seasoning and red pepper flakes (if using). Cook for another minute until fragrant.
4. Pour in the beef broth and diced tomatoes (undrained). Bring to a boil.
5. Add the pasta to the pot. Make sure the pasta is submerged in the liquid. If not, add a little more beef broth or water.
6. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is cooked through and the liquid has been absorbed. Stir occasionally to prevent sticking.
7. Remove the pot from the heat. Stir in the heavy cream, Parmesan cheese, and butter until everything is melted and creamy.
8. Season with salt and pepper to taste.
9. Garnish with fresh parsley before serving.
