Lemon Chicken & Veggie Orzo Stir Fry ๐๐๐ฅฆ
A zesty, colorful one-pan meal thatโs bursting with flavor and ready in no time!
Ingredients:
1 cup orzo
1 lb diced chicken breast
1 zucchini, chopped
1 red bell pepper, chopped
1 cup broccoli florets
2 tbsp lemon juice
1 tsp lemon zest
2 tbsp olive oil
ยผ cup grated Parmesan
1 tsp garlic powder
ยฝ tsp salt
ยผ tsp black pepper
ยฝ tsp dried oregano
ยผ tsp red pepper flakes (optional)
Fresh parsley (for garnish)
Instructions:
Cook orzo, then drain and set aside.
Heat 1 tbsp oil in a skillet. Cook chicken with garlic powder, salt, and pepper until browned. Remove.
Add remaining oil. Sautรฉ zucchini, bell pepper, and broccoli for 3โ4 minutes.
Add chicken and orzo back in. Stir in lemon juice, zest, oregano, and pepper flakes. Cook 2 more minutes.
Sprinkle with Parmesan and parsley. Serve warm. See less
