Ingredients:
3–4 lb beef chuck roast
2 tbsp olive oil
2 large onions, thinly sliced
4 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tbsp balsamic vinegar
1 (10.5 oz) can French onion soup
1 cup beef broth
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
½ tsp red pepper flakes (optional)
2 tbsp cornstarch + 2 tbsp water (for thickening)

Instructions:
1️⃣ Sear the Roast:
Heat olive oil in a large skillet over medium-high heat.
Season roast with salt and black pepper, then sear for 3–4 minutes per side until browned.
Transfer to the slow cooker.
2️⃣ Prepare the Onion Base:
In the same skillet, add onions and cook for 5 minutes until softened.
Stir in garlic, Worcestershire sauce, and balsamic vinegar. Cook for 1 minute.
Transfer mixture to the slow cooker over the roast.
3️⃣ Slow Cook:
Pour in French onion soup and beef broth.
Sprinkle with thyme and red pepper flakes if using.
Cover and cook on LOW for 8 hours or HIGH for 5 hours, until tender.
4️⃣ Thicken the Sauce (Optional):
Remove roast and set aside.
Mix cornstarch and water, then stir into the slow cooker.
Cook on HIGH for 5–10 minutes until thickened.
