Easy Fresh Carrot Ribbon Salad Perfect Light Refreshing Bite 🥕🌿☀️
Ingredients:
4-5 medium carrots, preferably a mix of colors (orange, purple, yellow, white)
For the Ginger Lime Dressing:
2 tbsp (30ml) olive oil
2 tbsp (30ml) fresh lime juice
1 tsp grated fresh ginger
1 tsp maple syrup or agave nectar (optional, to balance)
Salt and freshly ground black pepper to taste
Optional additions to salad:
2 tbsp chopped fresh cilantro or mint
1-2 tbsp toasted pumpkin seeds or sunflower seeds
Thinly sliced scallions
Directions:
1. Prepare Carrot Ribbons: Wash and peel the carrots. Using a vegetable peeler (a Y-peeler works best), shave the carrots lengthwise into long, thin ribbons. Rotate the carrot as you peel to get even ribbons. Stop when you reach the core (you can chop the core finely and add it or save it for another use). Place the carrot ribbons in a medium bowl.
2. Make the Dressing: In a small bowl or jar, whisk together the olive oil, lime juice, grated ginger, sweetener (if using), salt, and pepper until well combined.
3. Dress the Salad: Pour the dressing over the carrot ribbons in the bowl. Gently toss the salad until the ribbons are evenly coated with the dressing.
4. Add Extras: Gently fold in the chopped fresh cilantro or mint, toasted seeds, and/or sliced scallions, if using.
5. Serve: Serve the salad immediately for the best crisp texture, or let it sit for 10-15 minutes to allow the flavors to meld slightly (the carrots will soften a bit). Taste and adjust seasoning if needed before serving.
