This creamy, dreamy pasta is packed with bold blackened salmon bites, tender broccoli, and a rich garlic-Parmesan Alfredo sauce thatβll make your taste buds do a happy dance π. Perfect for date night, weeknight flex, or when you wanna treat yourself like royalty π
π Ingredients
For the Blackened Salmon:
1 lb salmon fillets (cut into chunks)
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
Β½ tsp onion powder
Β½ tsp cayenne pepper (or less if you're shy with spice πΆοΈ)
Β½ tsp dried thyme
Β½ tsp black pepper
Β½ tsp salt
For the Pasta & Sauce:
8 oz pappardelle, fettuccine, or your fave pasta
1Β½ cups broccoli florets
1 tbsp butter
4 cloves garlic, minced
1Β½ cups heavy cream
1 cup grated Parmesan cheese
1 cup mozzarella cheese
1 tsp Italian seasoning
Salt & black pepper to taste
Red pepper flakes (optional, for kick!)
Chopped parsley & extra parm for garnish β¨
π₯ Instructions1. Blacken the Salmon:
In a bowl, toss salmon chunks with olive oil and all those bold spices. Heat a skillet over medium-high and sear salmon for 2β3 minutes per side until blackened and cooked through. Set aside (and try not to eat it all right there π).
2. Boil the Pasta & Broccoli:
Cook pasta in salted boiling water according to package. In the last 2β3 minutes, toss in broccoli so it gets tender but stays bright green π. Drain and set aside.
3. Make the Alfredo Sauce:
In the same skillet, melt butter over medium heat. Add garlic and sautΓ© for 1 minute until fragrant. Pour in heavy cream and stir until it simmers. Add Parmesan, mozzarella, and Italian seasoning β stir until smooth and creamy. Season with salt, pepper, and red pepper flakes if you're feelinβ spicy πΆοΈ.
4. Toss It All Together:
Add the pasta and broccoli into the sauce and gently toss to coat every noodle in that cheesy goodness. Top it off with those beautiful blackened salmon chunks.
