7UP Pound Cake Recipe with a delicious glaze
Ingredients for the Cake:
• 3 cups granulated sugar
• 1 1/2 cups (3 sticks) unsalted butter, softened
• 5 large eggs
• 3 cups all-purpose flour
• 1 cup 7UP soda (not diet)
• 1 teaspoon vanilla extract
• 1 teaspoon lemon extract (optional, for extra citrus flavor)
Ingredients for the Glaze:
• 1 cup powdered sugar
• 2–3 tablespoons 7UP soda
• 1 teaspoon lemon juice (optional, for tanginess)
Instructions:
For the Cake:
1. Preheat Oven: Set your oven to 325°F (165°C). Grease and flour a bundt pan thoroughly.
2. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 3–5 minutes).
3. Add Eggs: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
4. Alternate Adding Flour and 7UP: Reduce the mixer speed to low. Gradually add the flour, alternating with the 7UP soda, starting and ending with flour. Mix just until combined.
5. Add Flavoring: Stir in the vanilla extract and lemon extract (if using).
6. Bake: Pour the batter evenly into the prepared bundt pan. Bake for 75–85 minutes or until a toothpick inserted into the center comes out clean.
7. Cool: Allow the cake to cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
For the Glaze:
1. Mix Ingredients: In a small bowl, whisk together powdered sugar, 7UP soda, and lemon juice (if using) until smooth. Adjust the consistency by adding more powdered sugar for a thicker glaze or more 7UP for a thinner glaze.
2. Drizzle: Once the cake has cooled, drizzle the glaze over the top of the cake.
Serve and Enjoy!
