Frozen S’mores Cheesecake Bars 🍫🍰🔥

Ingredients:

1/4 cup (60g) unsalted butter, melted 🧈
1/4 cup (50g) granulated sugar 🍬
1 and 1/2 cups (150g) finely crushed graham cracker crumbs 🍪
16 oz (450g) cream cheese, softened 🧀
1 cup (200g) granulated sugar 🍬
1 cup (240ml) heavy cream 🥛
1 teaspoon vanilla extract 🌼
1 and 1/4 cups marshmallow fluff 🍥
1 cup (170g) semi-sweet chocolate chips 🍫
1/2 cup (120ml) heavy cream 🥛

Directions:

1. First things first, line a 9x9 inch (23x23 cm) baking pan with parchment paper, leaving some overhang to make removing the bars easier later on.
2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until everything is well combined. Then, press this mixture firmly into the bottom of your prepared pan to create a delicious crust. Pop it in the fridge while you whip up the filling.
3. Now, grab a large bowl and beat the cream cheese and sugar together with an electric mixer until it’s nice and smooth.
4. Add in that heavy cream and a splash of vanilla extract, and keep beating until you achieve those fabulous stiff peaks.
5. Time to fold in the marshmallow fluff gently, making sure it's evenly distributed throughout your creamy mixture.
6. Spread this heavenly cheesecake mixture evenly over your chilled crust, and smooth the top with a spatula. Pop it in the freezer for at least 4 hours or until it’s nice and firm.
7. For the ganache, heat the cream in a small saucepan over medium heat until it’s just about to simmer. Then, remove it from heat, and pour it over the chocolate chips in a heatproof bowl. Let it sit for a minute before stirring until it's completely smooth.
8. Once your cheesecake bars are frozen, carefully remove them from the pan using that handy parchment overhang. Drizzle the chocolate ganache over the top before slicing into bars.
9. Allow the bars to sit at room temperature for about 10 minutes before serving for the best texture.
