Coconut Shrimp with Lime Herb Noodles
Crispy Coconut Shrimp with Zesty Lime-Herb Noodle Nest
Ingredients:
1 lb (450g) large shrimp, peeled and deveined
1 cup shredded unsweetened coconut
1/2 cup panko breadcrumbs
1/2 cup all-purpose flour
2 eggs, beaten
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper, to taste
Olive oil (for shallow frying)
For the Lime Herb Noodles:
8 oz (225g) rice noodles or thin spaghetti
2 tablespoons olive oil
Zest and juice of 1 lime
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh basil, chopped
1 tablespoon green onions, sliced
Salt, to taste
Directions:
Cook the noodles according to package instructions. Drain and rinse under cold water. Set aside.
In a large bowl, mix the coconut and panko. In another bowl, combine flour with garlic powder, paprika, salt, and pepper.
Dredge each shrimp in the seasoned flour, dip in beaten eggs, then coat in the coconut-panko mixture.
Heat a thin layer of olive oil in a skillet over medium heat. Fry shrimp in batches for 2-3 minutes per side until golden and crispy. Drain on paper towels.
Toss the noodles with olive oil, lime zest, lime juice, herbs, and green onions. Season to taste with salt.
Serve the crispy coconut shrimp over the lime herb noodles and garnish with extra lime wedges and fresh herbs if desired.
