Creamy Cajun Chicken Stuffed Shells
Ingredients:
1 lb jumbo pasta shells
2 tablespoons olive oil
2 boneless, skinless chicken breasts, cooked and shredded
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 cup diced onion
2 cloves garlic, minced
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese, plus more for topping
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
1/2 cup chicken broth
1 tablespoon fresh parsley, chopped (for garnish)
Salt and pepper, to taste
1 jar marinara sauce (about 24 oz)
Directions:
Cook the Pasta: Boil the jumbo pasta shells according to package instructions. Drain and set aside, making sure to toss with a little olive oil to prevent sticking.
Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing for 2-3 minutes until softened. Add the shredded chicken, Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Stir to combine and cook for another 5-7 minutes until the chicken is heated through and fragrant.
Make the Creamy Sauce: In the same skillet, add the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly. Add ricotta cheese, Parmesan, and 1/2 cup mozzarella cheese, stirring until the cheese is melted and the sauce is smooth. Taste and adjust seasoning with more salt and pepper if needed.
Stuff the Shells: Spoon a generous amount of the creamy Cajun chicken mixture into each cooked pasta shell. Place the stuffed shells into a greased 9x13-inch baking dish, arranging them in a single layer.
Top and Bake: Pour the marinara sauce over the stuffed shells, making sure they are covered. Sprinkle the remaining mozzarella cheese on top. Cover with aluminum foil and bake at 375°F (190°C) for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serve: Garnish with fresh chopped parsley and serve warm with a side salad or garlic bread.
