Ingredients:
300g linguine or spaghetti 🍝
2 chicken breasts, diced 🐔
2 tbsp olive oil 🫒
2 garlic cloves, minced 🧄
200g cherry tomatoes 🍅
Salt & pepper to taste 🧂
1/2 tsp red chili flakes (optional) 🌶️
30g grated Parmesan cheese 🧀
Fresh basil or parsley, chopped 🌿
Instructions:
Cook pasta in salted water until al dente, drain and set aside. Season the chicken pieces with salt and pepper, then grill or sauté in olive oil until golden and cooked through. Add garlic and cherry tomatoes, cooking until tomatoes begin to burst. Toss in the cooked pasta and mix well, seasoning with chili flakes if desired. Sprinkle with Parmesan and fresh herbs before serving.
Tips:
Add a splash of white wine or lemon juice for extra flavor. You can also swap chicken for shrimp or tofu.
