Honey Cinnamon Roasted Sweet Potatoes
Ingredients:
4 medium sweet potatoes, peeled and diced into 1-inch cubes
3 tablespoons olive oil
3 tablespoons honey
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
Fresh parsley or thyme, for garnish (optional)
Directions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
Prepare Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, honey, cinnamon, salt, black pepper, and nutmeg (if using). Ensure the potatoes are well coated with the mixture.
Roast: Spread the sweet potatoes in an even layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and lightly caramelized.
Garnish and Serve: Remove the sweet potatoes from the oven and garnish with fresh parsley or thyme, if desired. Serve immediately.
