🧾 Ingredients (Serves 2–3)

🍗 Herb-Marinated Chicken
• 2 boneless, skinless chicken breasts, sliced
• Zest and juice of 1 lemon 🍋
• 1 clove garlic, minced 🧄
• 1 tsp dried oregano
• 1 tbsp olive oil
Salt & pepper to taste



🧄 Lemon-Ricotta Alfredo Sauce
• 2 tbsp butter
• 1 clove garlic, minced 🧄
• ½ cup heavy cream
• ½ cup ricotta cheese
• ¼ cup grated Parmesan cheese
• Zest of ½ lemon 🍋
• 1 tsp chopped fresh parsley or dill (optional)
• Salt & pepper to taste



🥔 Garlic-Herb Roasted Potatoes
• 2 medium Yukon Gold potatoes, diced
• 1 tbsp olive oil
• 1 clove garlic, minced 🧄
• 1 tsp dried oregano or Italian herbs
• 2 tbsp grated Parmesan cheese
• Salt & pepper to taste



🍃 Garnish
• 1 tbsp fresh parsley, chopped
• Additional grated Parmesan cheese
• Lemon wedges for serving 🍋



🔥 Instructions

1. Marinate & Grill the Chicken
• In a bowl, mix olive oil, lemon zest, lemon juice, garlic, oregano, salt, and pepper.
• Toss chicken slices in the marinade and let sit for at least 20 minutes.
• Heat a skillet or grill pan over medium-high heat and cook chicken for 3–4 minutes per side until golden and cooked through.
• Set aside and keep warm.



2. Make the Lemon-Ricotta Alfredo Sauce
• In a medium saucepan, melt butter over medium heat.
• Add garlic and sauté until fragrant.
• Stir in heavy cream, ricotta, Parmesan, lemon zest, and fresh parsley or dill, if using.
• Cook until the sauce is smooth and slightly thickened, about 5 minutes.
• Season with salt and pepper to taste.
• Keep warm.



3. Roast the Potatoes
• Preheat oven to 400°F (200°C).
• Toss diced potatoes with olive oil, garlic, oregano, Parmesan, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes, flipping halfway through, until golden and crispy.



4. Assemble the Plate
• Serve the herb-grilled chicken over a bed of the lemon-ricotta Alfredo sauce.
