Sausage, Egg, and Cheese Breakfast Roll-Ups
Ingredients:
4 large eggs
1/2 lb breakfast sausage, crumbled
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
4 large flour tortillas
2 tbsp butter
Salt and pepper to taste
Directions:
In a large skillet, cook the sausage over medium heat until browned and fully cooked, breaking it up with a spoon as it cooks. Remove from heat and set aside.
In the same skillet, melt butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and scramble until fully cooked. Remove from heat.
Lay the flour tortillas on a flat surface and evenly distribute the scrambled eggs, sausage, cheddar, and mozzarella cheese on each.
Roll up the tortillas tightly, folding in the sides as you go.
If desired, return the roll-ups to the skillet and cook for an additional 2-3 minutes on each side to achieve a crispy, golden finish.
Slice into pieces and serve warm.
