Cajun Garlic Chicken with Creamy Rotini Pasta

Ingredients:

1 lb boneless, skinless chicken breasts, cut into strips
12 oz rotini pasta
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper, to taste
4 cloves garlic, minced
2 tablespoons butter
1 cup heavy cream
1/2 cup chicken broth
3/4 cup grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Red pepper flakes (optional, for heat)

Directions:

Cook rotini in salted water until al dente. Drain and set aside.
Toss chicken strips with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned and cooked through. Remove from pan and set aside.
In the same skillet, melt butter and sauté minced garlic for 1 minute. Pour in heavy cream and chicken broth, stirring to combine.
Stir in Parmesan cheese and let the sauce simmer gently until thickened, about 4–5 minutes. Adjust seasoning with more Cajun spice or red pepper flakes if you want it spicier.
Return the cooked chicken to the skillet, along with the rotini pasta. Toss until everything is well coated and heated through.
Sprinkle with fresh parsley and extra Parmesan before serving. Serve hot and dig in!
