Ham and Bean Soup
Ingredients:
2 cups cooked ham, diced or shredded
1 cup dried mixed beans (or 2 cans of mixed beans, drained)
6 cups chicken or vegetable broth
1 onion, diced
2 carrots, diced
2 celery stalks, diced
2 garlic cloves, minced
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
2 tbsp olive oil
2 tbsp fresh parsley, chopped (optional)
Directions:
1. Prepare beans (if dried): Soak beans overnight or use quick-soak method. Drain and rinse.
2. Sauté aromatics: In a large pot, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic until softened.
3. Add ingredients: Stir in ham, beans, broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
4. Simmer: Reduce heat to low, cover, and simmer for 1.5–2 hours (or 30 minutes if using canned beans) until beans are tender.
5. Adjust seasoning: Remove bay leaf, taste, and adjust seasoning. Stir in parsley if desired.
