Ingredients:
For the Reuben Sandwich:
8 slices cherry-smoked pastrami
4 slices Swiss cheese
4 slices rye bread
1/2 cup Thousand Island dressing
2 tbsp unsalted butter, softened
For the Beer Braised Sauerkraut:
1 cup sauerkraut, drained
1/2 cup beer (lager or pale ale works well)
1/2 small onion, thinly sliced
1 tbsp brown sugar
1 tbsp Dijon mustard
1 tbsp butter
1 tsp caraway seeds (optional)
Instructions:
For the Beer Braised Sauerkraut:
Sauté the Onions:

In a skillet over medium heat, melt the butter and sauté the onions for 4-5 minutes until softened.
Add Sauerkraut and Beer:

Stir in the sauerkraut, beer, brown sugar, Dijon mustard, and caraway seeds (if using). Simmer on low heat for 10-15 minutes, stirring occasionally, until the beer has reduced and the sauerkraut is flavorful and tender.
For the Reuben Sandwich:
Assemble the Sandwiches:

Butter one side of each slice of rye bread. Spread Thousand Island dressing on the unbuttered side of two slices of bread. Layer cherry-smoked pastrami, Swiss cheese, and a generous spoonful of beer-braised sauerkraut on top. Top with the remaining slices of bread, buttered side up.
Grill the Sandwiches:
