Pineapple Lemonade
Ingredients:
5 cups cold water
1–2 cups ice cubes
1 cup fresh lemon juice (about 5–6 lemons)
2 cups fresh pineapple chunks (or canned pineapple, drained)
3/4 cup granulated sugar (adjust to taste)
Lemon and pineapple slices, for garnish (optional)
Fresh mint leaves, for garnish (optional)
Directions:
Blend the Pineapple:
Add the pineapple chunks to a blender along with 1 cup of cold water. Blend until smooth. If desired, strain the mixture through a fine mesh sieve to remove the pulp for a smoother lemonade.
Mix the Lemonade Base:
In a large pitcher, combine the pineapple puree, fresh lemon juice, and sugar. Stir until the sugar is completely dissolved.
Add Water and Ice:
Pour in the remaining 4 cups of cold water and stir to combine. Add ice cubes to chill the lemonade.
Taste and Adjust:
Taste the lemonade and adjust sweetness by adding more sugar if needed, or add more water if it's too strong.
Serve:
Pour the pineapple lemonade into glasses. Garnish with lemon slices, pineapple wedges, and fresh mint leaves if desired.
