Traditional Scotch Pies 🥧✨
Golden, hearty, and filled with well-seasoned minced meat, these beauties are a proper taste of Scotland’s baking heritage!

Ingredients:
🥩 Minced lamb or beef: 500g
🧅 Onion: 1 small, finely chopped
🧂 Ground white pepper: 1 tsp
🧂 Ground black pepper: ½ tsp
🧂 Salt: 1 tsp
🌿 Dried sage: 1 tsp
🌿 Dried thyme: ½ tsp
🍞 Fresh white breadcrumbs: 50g
💧 Water or beef stock: 100ml
🥣 Plain flour: 300g (for pastry)
🧈 Unsalted butter: 100g
💧 Water: 100ml (for pastry)
🥚 Egg: 1, beaten (for glazing)

Method:
🍳 Preheat the oven to 180°C (160°C fan).
🥄 In a large bowl, mix the minced meat, onion, white pepper, black pepper, salt, sage, thyme, breadcrumbs, and 100ml water or stock. Stir well until everything is nicely combined.
🥣 For the pastry, place the flour in a bowl. In a saucepan, melt the butter with the 100ml water until just simmering, then pour into the flour. Stir quickly with a wooden spoon to form a dough.
🧤 Turn the dough onto a lightly floured surface and knead gently until smooth.
🧲 Roll out two-thirds of the pastry and cut out circles to line small pie tins or a muffin tin, pressing the pastry up the sides firmly.
🥩 Fill each pastry case generously with the seasoned mince mixture, packing it down well.
🧲 Roll out the remaining pastry and cut out lids for the pies. Place on top and crimp the edges to seal.
🕳️ Cut a small hole in the centre of each lid to let steam escape.
🥚 Brush the tops with beaten egg for a glossy finish.
🔥 Bake in the oven for 35–40 minutes until golden brown and piping hot.
