Craving a hearty, flavour-packed meal? This Brisket Pot Pie combines tender beef brisket with spicy jalapeños and savoury onions, all encased in a golden, flaky crust. Perfect for a cozy dinner!
📝 Ingredients:
1 lb cooked beef brisket, pulled apart
2 jalapeños, chopped (seeds removed for milder flavor)
1 onion, chopped
2 cloves garlic, minced
1 cup shredded cheddar cheese
½ cup shredded Monterey Jack cheese
¼ cup all-purpose flour
1½ cups beef broth
½ cup heavy cream
2 tsp dried thyme
½ tsp salt
¼ tsp black pepper
2 pie crusts (homemade or store-bought)
👩🍳 Directions:
1️⃣ Preheat oven to 375°F (190°C).
2️⃣ In a skillet, sauté chopped onion and minced garlic until softened (about 3 minutes). Add chopped jalapeños and cook for another 2 minutes.
3️⃣ Stir in ¼ cup flour to create a roux; cook for 1 minute.
4️⃣ Gradually add 1½ cups beef broth and ½ cup heavy cream, stirring continuously until the mixture thickens.
5️⃣ Add pulled brisket, shredded cheddar and Monterey Jack cheeses, dried thyme, salt, and black pepper. Mix well.
6️⃣ Place one pie crust in a 9-inch pie dish. Pour in the brisket mixture and cover with the second pie crust. Seal edges and cut slits on top for steam to escape.
7️⃣ Bake for 35–40 minutes until the crust is golden brown and the filling is bubbling.
