🍝 Spaghetti alle Cozze
An elegant pasta with fresh mussels and light tomato sauce.
Ingredients
• Spaghetti: 400 g (14 oz)
• Fresh mussels: 2 lbs (1 kg), cleaned
• Garlic: 4 cloves, minced
• Olive oil: 4 tbsp
• White wine: 1 cup (240 ml)
• Cherry tomatoes: 1 cup, halved
• Fresh parsley: 2 tbsp, chopped
• Salt and pepper: to taste
Instructions
1️⃣ • Cook spaghetti until al dente.
2️⃣ • Heat olive oil and garlic in skillet.
3️⃣ • Add mussels, white wine, and cover until mussels open.
4️⃣ • Stir in cherry tomatoes and simmer 5 minutes.
5️⃣ • Toss pasta with sauce and parsley.
6️⃣ • Serve immediately.
