Pot Roast Slow Cooker
Ingredients:
⦁ 3–4 lb beef chuck roast
⦁ 4 Tbsp olive oil (divided)
⦁ 2 cups beef broth
⦁ 1 package onion soup mix
⦁ 1 onion, quartered
⦁ 1 lb red baby potatoes
⦁ 1 cup baby carrots
⦁ Salt & pepper to taste
Instructions:
1. Season roast with salt and pepper.
2. Heat 2 Tbsp olive oil in a skillet, sear roast 4-5 mins per side until golden.
3. Place roast in slow cooker; add beef broth.
4. In a large ziplock bag, toss potatoes, onion, and carrots with remaining olive oil and onion soup mix; put on top of roast.
5. Cook on high pressure (Instant Pot) for 60–80 mins or medium heat in slow cooker for 6-7 hours until tender.
6. Let natural release 10 mins, then quick release pressure.
7. Shred roast, serve with veggies and broth drizzled on top.
