Tiramisu Brownies with 2 Coffee Layers
Ingredients:
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 tsp salt
- 2 tbsp instant coffee granules
- 1/2 cup strong brewed coffee
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1 tsp cocoa powder for dusting
Directions:
1. Preheat oven to 350°F (175°C). Grease and line a 9x9 inch baking pan with parchment paper.
2. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in sugar until combined.
3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
4. In a separate bowl, sift together flour, cocoa powder, and salt.
5. Gradually fold the dry ingredients into the butter mixture until just combined.
6. Dissolve the instant coffee granules in the brewed coffee.
7. Pour half of the brownie batter into the prepared pan. Drizzle half of the coffee mixture evenly over the batter.
8. Pour the remaining brownie batter on top and drizzle with the remaining coffee mixture.
9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out with moist crumbs.
10. While brownies cool, whip mascarpone cheese with powdered sugar until smooth.
11. Spread mascarpone mixture evenly over the cooled brownies.
12. Dust the top with cocoa powder before serving.
