2 chicken breasts 🍗

1 tbsp olive oil 🫒

1 tsp smoked paprika 🌶️

1/2 tsp garlic powder 🧄

Salt & pepper 🧂

For the Salad:

150g mixed lettuce 🥬

150g cherry tomatoes, halved 🍅

1 cucumber, sliced 🥒

1 avocado, diced 🥑

150g sweet corn 🌽

For the Creamy Herb Dressing:

150g Greek yogurt 🥣

2 tbsp mayonnaise 🥄

Juice of 1/2 lemon 🍋

2 tbsp fresh dill or parsley, chopped 🌿

1 garlic clove, minced 🧄

Salt & pepper to taste 🧂

Season chicken with olive oil, paprika, garlic powder, salt, and pepper, then grill or pan-sear for 6–7 minutes per side until cooked through. Slice into strips. In a bowl, whisk together yogurt, mayo, lemon juice, herbs, garlic, salt, and pepper to make the dressing. Arrange lettuce on plates, top with tomatoes, cucumber, avocado, corn, and sliced chicken. Drizzle with herb dressing and serve immediately.
