Rhubarb Dream Bars
Ingredients:
For the crust:
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter, softened
For the filling:
2 large eggs
1 cup granulated sugar
1/4 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
2 cups chopped rhubarb
Directions:
Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan.
In a medium bowl, combine flour and sugar for the crust. Cut in softened butter until crumbly.
Press mixture into the bottom of the prepared pan and bake for 15 minutes.
While the crust is baking, beat eggs in a separate bowl. Add sugar, flour, baking powder, and salt. Stir until smooth.
Fold in chopped rhubarb and pour the mixture over the hot crust.
Return to oven and bake for 35–40 minutes, or until the top is golden and the filling is set.
Cool completely before slicing into bars.
