French Onion Grilled Cheese Recipe
Ingredients:
• 2 large onions, thinly sliced
• 2 tablespoons unsalted butter
• 1 teaspoon sugar (optional, for caramelization)
• Salt and pepper, to taste
• 4 slices of sourdough or rustic bread
• 1 cup shredded Gruyère cheese (or Swiss cheese)
• 1 cup shredded mozzarella cheese
• 2 tablespoons olive oil (for grilling)
• Fresh thyme leaves (for garnish, optional)
Directions:
1. Caramelize the Onions:
o In a large skillet, melt the butter over medium heat. Add the sliced onions, a pinch of salt, and sugar (if using). Cook, stirring occasionally, for about 20-25 minutes until the onions are soft and caramelized. Adjust heat as necessary to prevent burning. Once caramelized, season with salt and pepper to taste.
2. Prepare the Sandwiches:
o Lay out the slices of bread. On two slices, layer the Gruyère cheese, followed by the caramelized onions, and then the mozzarella cheese. Top with the remaining slices of bread to create two sandwiches.
3. Grill the Sandwiches:
o In the same skillet (or a clean one), add olive oil and heat over medium heat. Carefully place the sandwiches in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
4. Serve:
o Remove the sandwiches from the skillet and let them cool for a minute. Cut in half, garnish with fresh thyme if desired, and serve warm.
