✅Herb-Infused Fresh Mozzarella✅
A gourmet twist adding fresh basil and oregano for a fragrant, flavorful mozzarella perfect for Caprese salads.
Ingredients:
1 gallon whole milk
1 1/2 tsp citric acid dissolved in water
1/4 tsp liquid rennet diluted in water
1 tsp salt
1/4 cup finely chopped fresh basil
1/2 tsp dried oregano
Instructions:
Combine milk with citric acid solution in a large pot; heat to 90°F.
Add diluted rennet, stir gently, and let sit for 5 minutes until curds form.
Cut curds into cubes; gently heat to 105°F while stirring.
Drain curds into a microwave-safe bowl; microwave in short bursts, kneading until smooth and stretchy.
Mix in salt, basil, and oregano; form into balls and chill in ice water.
Serve in a Caprese salad or as desired.
