Best Carrot Cake
This is an excellent carrot cake and a perfect addition to your Easter meal.
~~Ingredients ~~
Cake:
4 large eggs, beaten
1 cup packed brown sugar
1 cup extra fine granulated sugar
1-1/2 cups vegetable oil
2 cups unbleached flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
3 cups finely grated carrots
1 cup Baker’s Angel flaked coconut
1 (8 oz.) can crushed pineapple, drained (reserve juice)
1 cup chopped walnuts ( I prefer the black walnuts)
1 cup golden raisins, optional
Frosting:
1/2 cup butter, room temp
1 (8 oz.) block Full-fat Philadelphia cream cheese, room temp
5 cups confectioner’s sugar
1 to 1-1/2 teaspoons reserved pineapple juice
2 teaspoons vanilla extract

Preheat the oven to 325 degrees. Prepare 4 pans with non-stick cooking spray or your homemade cake release. Line the pans with parchment paper because of the heavy ingredients, this cake can stick. If you don’t line your pans, and they stick, then stick the entire cake pan in the freezer after they have completely cooled. Let the cake freeze completely and then the cake will release. Do not try to make 2 thick layers and cut them in half because of the ingredients used.
Add the eggs to a large bowl and beat well. Add the sugars to the eggs and beat until light and fluffy. Add the oil and whisk it in by hand to thoroughly combine. Then start adding the additional cake ingredients and mix together with a whisk just until everything is thoroughly combined. Divide the batter into the prepared cake pans and bake for 35-40 mibutes or until a skewer inserted in the center comes out clean. Remove cake from pans and let cool completely before frosting.
Frosting:
In a bowl, add the butter and cream cheese. Mix until light and creamy. Add 1/2 of the powdered and mix well. Add the reserved pineapple juice, the rest of the powdered sugar, and the vanilla extract. Beat until thoroughly combined . You can add a smidge more of pineapple juice if needed to reach desired consistency. Frost cake and decorate as desired .
