Amish Applesauce Cake

Ingredients:

For the Cake:
2 cups all-purpose flour
1 cup unsweetened applesauce
1 cup brown sugar, packed
½ cup granulated sugar
½ cup unsalted butter, softened
2 large eggs
1 tsp vanilla extract
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
½ tsp allspice
½ cup chopped walnuts or raisins (optional)

For the Caramel Glaze:
½ cup brown sugar
4 tbsp unsalted butter
2 tbsp heavy cream
½ tsp vanilla extract
Directions:

Preheat oven to 350°F (175°C) and grease a 9x9-inch baking pan.
In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla and applesauce.
In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice. Gradually mix into the wet ingredients until just combined.
Fold in walnuts or raisins if using. Pour the batter into the prepared pan and spread evenly.
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let cool slightly.
Make the Caramel Glaze: In a saucepan over medium heat, melt butter and brown sugar together. Stir in heavy cream and bring to a light boil, cooking for 2 minutes. Remove from heat and mix in vanilla.
Pour warm caramel glaze over the cake and let it soak in before slicing. Enjoy!
