4 large eggs, separated
3/4 cup granulated sugar, divided
1 tsp vanilla extract
1/4 cup whole milk
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
Gel food coloring (purple, blue, and pink)
For the Filling:
1 cup heavy whipping cream
1/4 cup powdered sugar
1/2 tsp vanilla extract
For Decoration:
Edible glitter (silver and gold)
Black gel food coloring (optional, for a darker galaxy effect)
Instructions
Prepare the Cake Batter: Preheat the oven to 350°F (175°C) and line a 10x15-inch jelly roll pan with parchment paper. In a large bowl, beat the egg yolks with 1/2 cup sugar until pale and thick. Add the vanilla extract and milk, mixing until combined.

Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg yolk mixture until just combined.

Whip the Egg Whites: In another bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup sugar and continue beating until stiff peaks form. Gently fold the egg whites into the batter in two additions, being careful not to deflate the mixture.

Add Colors: Divide the batter into three bowls. Tint one portion purple, one blue, and one pink using gel food coloring. Drop spoonfuls of each color onto the prepared pan, then use a skewer or knife to swirl the colors together for a marbled effect.

Bake: Bake for 12-15 minutes, or until the cake springs back when lightly touched. While the cake bakes, lay a clean kitchen towel on the counter and dust it with powdered sugar.

Roll the Cake: Immediately after baking, invert the cake onto the prepared towel. Carefully peel off the parchment paper. Starting from one short end, roll the cake and towel together into a log. Let it cool completely in this shape.

Prepare the Filling: In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Assemble: Gently unroll the cooled cake and spread the whipped cream filling evenly over the surface. Roll the cake back up (without the towel) and place it seam-side down on a serving plate.

Decorate: Brush the outside of the cake roll with a thin layer of black gel food coloring (if using) to create a dark galaxy base. Sprinkle edible glitter over the top to mimic stars and cosmic dust.
