Honey Dijon Glazed Salmon with Creamy Dill Cucumber Pasta
Maple-Honey Dijon Salmon over Refreshing Cucumber Dill Pasta
Ingredients:
4 salmon fillets (6 oz each)
3 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon maple syrup
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon lemon zest
Salt and pepper to taste
12 oz pasta of choice
1 English cucumber, diced
1/4 cup fresh dill, chopped
1/2 cup Greek yogurt
2 tablespoons lemon juice
1 tablespoon olive oil
1 teaspoon garlic powder
1/4 cup red onion, finely diced
Salt and pepper to taste
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, mix honey, Dijon mustard, maple syrup, olive oil, minced garlic, and lemon zest to create the glaze.
Place salmon fillets on the prepared baking sheet, skin side down. Season with salt and pepper.
Brush the honey Dijon glaze generously over each salmon fillet.
Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
While salmon is baking, cook pasta according to package instructions. Drain and set aside.
In a large bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic powder, salt, and pepper to create the pasta sauce.
Add the cooked pasta to the bowl with the sauce and toss to coat evenly.
Fold in the diced cucumber, chopped dill, and red onion.
Serve the creamy cucumber dill pasta with the honey Dijon glazed salmon on top.
Garnish with additional dill and lemon wedges if desired.
