Smoked Sausage & Cabbage Soup
Ingredients:
1 lb smoked sausage, sliced
1/2 head cabbage, chopped
1 onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 can (14 oz) diced tomatoes
1 tsp paprika
1/2 tsp black pepper
1 tbsp olive oil
Fresh parsley for garnish
Directions:
1. Heat oil in a large pot over medium heat.
2. Add sausage and cook until browned, about 3 minutes. Remove and set aside.
3. In the same pot, sauté onion and garlic until soft.
4. Add cabbage, paprika, black pepper, and stir well.
5. Pour in chicken broth and diced tomatoes. Bring to a boil.
6. Reduce heat, cover, and simmer for 25 minutes.
7. Add sausage back in and cook for 5 more minutes.
8. Garnish with parsley and serve hot!
