𝐒𝐭𝐫𝐚𝐰𝐛𝐞𝐫𝐫𝐲 𝐒𝐰𝐢𝐫𝐥 𝐂𝐡𝐞𝐞𝐬𝐞𝐤𝐚𝐤𝐞
Ingredients:
For the crust:
- 2 cups graham cracker crumbs (or shortbread cookie crumbs)
- 1/2 cup melted butter
- 1/4 cup granulated sugar
For the cheesecake filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 tbsp lemon juice
For the strawberry swirl:
- 1 1/2 cups fresh strawberries, pureed
- 1/4 cup sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
For the topping:
- 1 cup fresh strawberries, sliced
- 1/2 cup strawberry glaze or preserves
- Whipped cream for garnish
Directions:
1. Preheat the oven to 325°F (163°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl until mixed thoroughly. Firmly press this mixture into the bottom of a 9-inch springform pan. Bake for about 8 minutes, then allow to cool.
2. In a separate large bowl, mix the cream cheese with the sugar until the mixture is smooth and creamy. Incorporate the eggs one at a time, mixing gently after each addition. Add the vanilla, sour cream, and lemon juice, stirring until combined. Pour half of this filling over the cooled crust.
3. For the strawberry swirl, combine pureed strawberries, sugar, cornstarch, and lemon juice in a saucepan. Cook the mixture over medium heat while stirring continuously until it thickens. Let it cool slightly before swirling spoonfuls of this mixture into the cheesecake batter with a knife or skewer. Pour the remaining cheesecake batter over the top and smooth the surface.
4. Bake for 50-55 minutes, until the edges are firm but the center remains slightly jiggly. Turn off the oven and allow the cheesecake to cool inside for about 1 hour with the door slightly ajar. Once cooled, transfer it to the refrigerator and chill for at least 4 hours or overnight.
5. After chilling, spread the strawberry glaze or preserves over the top of the cheesecake. Arrange the sliced strawberries on top and decorate with whipped cream around the edges before serving.

Cooking Time: 50-55 minutes.
Total Time: Approximately 5 hours (including chilling).
