Heavenly Raspberry Chocolate Mousse Cake Recipe 🍰🍫🍓
Ingredients:
1 1/2 cups chocolate cookie crumbs
1/3 cup melted butter
1 cup semi-sweet chocolate chips
2 cups heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh raspberries (plus extra for garnish)
Instructions:
Prepare the Crust: In a bowl, combine the chocolate cookie crumbs with melted butter. Press the mixture firmly into the bottom of a springform pan to form an even crust.
Melt the Chocolate: In a heatproof bowl set over a pot of simmering water, melt the chocolate chips, stirring until smooth. Allow it to cool slightly.
Whip the Cream: In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Make the Mousse: Gently fold the melted chocolate into the whipped cream until fully combined. Then, fold in 1 cup of fresh raspberries.
Assemble the Cake: Pour the chocolate mousse over the crust in the pan and smooth the top with a spatula.
Chill: Refrigerate the cake for at least 4 hours, or until set.
Garnish and Serve: Just before serving, garnish the cake with additional fresh raspberries.
