Ingredients:
• 4 medium russet potatoes, diced
• 2 chicken breasts, diced
• 6 slices bacon, cooked and crumbled
• 1 cup shredded cheddar cheese
• ½ cup mozzarella cheese
• ½ cup ranch dressing
• 2 tablespoons olive oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• ½ teaspoon paprika
• ½ teaspoon salt
• ½ teaspoon black pepper
• 2 green onions, chopped (for garnish)
Instructions:
1. Preheat Oven:
• Set oven to 400°F (200°C) and grease a baking dish.
2. Prepare Potatoes:
• Toss diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
• Spread evenly in the baking dish and bake for 25 minutes, stirring halfway.
3. Cook Chicken:
• Season chicken with a little salt and pepper.
• Sauté in a pan over medium heat for 5-7 minutes, until cooked through.
4. Assemble the Bake:
• Remove potatoes from the oven.
• Layer cooked chicken, crumbled bacon, and shredded cheeses on top.
• Drizzle with ranch dressing.
5. Final Bake:
• Return to oven and bake for another 10-15 minutes, until cheese is melted and bubbly.
