Cheesy Chicken Fritters with Garlic Aioli Dip
Ingredients:
For the Chicken Fritters:
1 1/2 lbs chicken breasts (about 3 large)
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour (or cornstarch or potato starch for gluten-free)
4 oz mozzarella cheese, shredded (about 1 1/3 cups)
1 1/2 tbsp fresh dill, chopped
1/2 tsp salt, or to taste
1/8 tsp black pepper
2 tbsp extra light olive oil (or any high-heat cooking oil)
For the Garlic Aioli Dip:
1/3 cup mayonnaise
1 garlic clove, pressed
1/2 tbsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
Directions:
Dice the chicken into small, 1/3-inch pieces and place them in a large mixing bowl.
Add eggs, mayonnaise, flour, shredded mozzarella, dill, salt, and pepper to the chicken. Mix until well combined. Cover and refrigerate for at least 2 hours or overnight for enhanced flavor and texture.
Heat a non-stick skillet over medium heat and add 2 tablespoons of oil.
Drop heaping tablespoons of the chicken mixture onto the skillet, flattening slightly with the back of a spoon.
Cook uncovered for 3-4 minutes on one side, then flip and cook for another 3 minutes, or until golden brown and fully cooked. Add oil as needed between batches. Repeat with the remaining mixture.
In a small bowl, mix all the dip ingredients until smooth.
Serve the fritters warm with the garlic aioli dip on the side.
