Chewy Vegan Cinnamon Spice High-Protein Cookies Recipe 💪🍪✨
Ingredients
1 cup (120g) almond flour, finely ground
1/2 cup (45g) rolled oats (use certified gluten-free if needed)
1/2 cup (approx 60g) vanilla or unflavored plant-based protein powder
1 tsp ground cinnamon
1/2 tsp ground ginger (optional)
1/4 tsp ground nutmeg (optional)
1/2 tsp baking soda
1/4 tsp salt
1/2 cup (120g) smooth cashew butter or almond butter
1/3 cup (80ml) pure maple syrup or agave nectar
1/4 cup (60ml) unsweetened applesauce or mashed banana
1 tsp (5ml) vanilla extract
Directions
1. Preheat Oven & Prep Pan: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Whisk Dry Ingredients: In a large bowl, whisk together the almond flour, rolled oats, protein powder, cinnamon, ginger (if using), nutmeg (if using), baking soda, and salt.
3. Mix Wet Ingredients: In a separate medium bowl, stir together the cashew/almond butter, maple syrup, applesauce/banana, and vanilla extract until well combined and smooth.
4. Combine: Pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon until a thick, slightly sticky cookie dough forms. If the dough seems too sticky to handle, you can chill it for 15-20 minutes.
5. Form Cookies: Drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving some space between them. These cookies won't spread much, so gently flatten each ball slightly with the palm of your hand or the bottom of a glass dipped in water/sugar.
6. Bake: Bake for 10-13 minutes, or until the edges are lightly golden brown and the centers are just set (they will firm up more as they cool). Do not overbake for a chewy texture.
7. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
8. Store cooled cookies in an airtight container at room temperature for up to 5 days.
