Cajun Creamy Shrimp Pasta with Sausages
Ingredients:
250g pasta (your choice, such as fettuccine or penne)
1 lb shrimp, peeled and deveined
2 sausages (chicken or pork, such as Andouille, sliced)
2 tablespoons olive oil
1 medium onion, thinly sliced
2 cloves garlic, minced
1 red bell pepper, diced
1 tablespoon smoked paprika
1 teaspoon Cajun seasoning
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper (optional, for extra heat)
1/2 cup chicken broth
1 cup heavy cream
1/2 cup milk
1 cup grated cheese (parmesan or cheddar)
Salt and pepper, to taste
1/4 cup fresh chives or parsley, chopped for garnish
Instructions:
Cook the pasta: Cook the pasta according to package instructions in a large pot of salted water. Once cooked, drain and set aside.
Cook the sausages: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage slices and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
Cook the shrimp: In the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and cook for 2-3 minutes per side, until they turn pink and opaque. Remove from the skillet and set aside.
Prepare the creamy sauce: In the same skillet, add the onion and bell pepper. Sauté for about 3 minutes until the onion becomes translucent. Add the garlic and cook for another minute. Sprinkle in the smoked paprika, Cajun seasoning, thyme, and cayenne pepper. Stir well to allow the spices to bloom.
Add the liquids: Pour in the chicken broth, heavy cream, and milk. Stir well to combine and bring the mixture to a simmer. Let it simmer for about 5 minutes until the sauce slightly thickens.
Assemble the dish: Add the cooked sausages, shrimp, and drained pasta into the skillet. Toss everything together to coat the pasta and proteins with the creamy sauce. Stir in the grated cheese and mix until melted and the sauce becomes even creamier. Season with salt and pepper to taste.
Serve: Divide the creamy pasta into bowls and garnish with fresh chives or parsley.
Tip: For an extra rich flavor, you can add a tablespoon of butter to the sauce just before serving.
